Rainbow salad with coconut turmeric dressing

 

Using whatever salads and veggies you have in the fridge, this is a simple, super nourishing, colourful salad which will fill your body with goodness. So many nutrients, good fats from the avocado, anti-inflammatory benefits from turmeric, and extra digestive benefits from the sauerkraut.

 

Ingredients

1 beetroot – shredded/grated

1 purple carrot – shredded/grated

2 cups of spinach – chopped finely

1 orange carrot – shredded/grated

1/4 large sweet potato – shredded/grated

1/8 – purple cabbage – shredded/grated

2 large tablespoons of sauerkraut (available at health food stores and tastes ridiculously good)

1/2 zucchini – shredded/grated

1 avocado – diced

sunflower seeds (to sprinkle on top)

1/2 cup walnuts

small handful of chopped coriander

 

Dressing – 2/3 cup coconut milk, 1 tsp turmeric, 1/2 tsp curry powder

 

Method

Toss all salad ingredients in bowl

Mix through turmeric dressing

Top with walnuts and sunflower seeds
