Apple & beet salad 🍏

Try this one today:

2 large Granny Smith apples, peeled, cored & sliced into matchsticks
2 large beetroots, peeled & sliced into matchsticks
¼ red onion, thinly sliced
3 tbsp white-wine vinegar
2 tbsp extra-virgin olive oil
Pinch pepper
100g feta cheese, crumbled
Fresh mint & basil leaves, for topping

1. Add sliced apple and beetroot to bowl, along with red onion, white wine vinegar, olive oil, pepper and feta. Mix together well until combined and serve on large flat platter.
2. Top with an extra drizzle of olive oil, feta and some fresh mint and basil leaves.

Serves 4
